Grape varieties : 80% Viognier – 20 % Clairette Blanche.Terroir : Spreading rock soil on a calcareous clay layer (Quaternary period – from 1 million years to now).
Position : Mainly located on Southern / southeastern terraces which are 75-120 meters above sea level.
Vine age : 18 years.
Vine yields : From 20 hl/ha to 30 hl/ha.
Fermentation : Carefully scraping harvest, direct pressing in absence of atmospheric oxygen, a maximal regulated fermentation temperature of 13°C, lees stirring for 3 months.
Maturation : 100% in inox vat.
Cellaring : 2 years.
Wine & food pairing : Asparagus, fruit tart, sheep or goat cheese.
