Grape varieties : 50% Grenache, 50 % Syrah.Terroir : Spreading rock soil on a calcareous clay layer (Quaternary period – from 1 million years to now).
Position : Mainly located on Southern terraces which are 75-120 meters above sea level.
Average vine age : 44 years.
Vine yields : 40 hl/ha.
Fermentation : Blending grape varieties in vat, carefully scraping harvest, a maximal regulated fermentation temperature of 26°C, 20 days macerating with 1 or 2 small regular pumping over a day.
Maturation : 100% in inox vat.
Cellaring : 3 years.
Wine & food pairing : Pork tenderloin with honey, sea bream with tapenade.
